Emmc size

I have purchase a NanoPi M4V2. I intend to use it for video capture and also will install OpenCV, Apache, and Mjpeg streamer (which has a few other required installs) along with the Friendly image.
1. Which OS should I use? FriendlyArm, FriendlyCore, Lubuntu? I think at least some of these have OpenCV already installed, right?
2. Will an 8GB Emmc be large enough for this (recording video will be done to the microSD), or should I opt for a 16GB one?
