So, I've managed to install Home Assistant Supervised (see https://www.friendlyelec.com/Forum/viewtopic.php?f=84&t=4249) by having root file system not use OverlayFS and it's running fine....for now.
However, HA keeps complaining about supervised failed to switch to cgroup v1. After a search on the net, the solutions seems to add the kernel option 'systemd.unified_cgroup_hierarchy=0' to the boot parameters in /boot/cmdline.txt or some grub cfg (if available).
There seems to be no boot config equivalent for the FriendlyElec versions. I did find /proc/cmdline which contains the boot parameters, but now the questions is how to modify those in order to add a parameter and to make it persistent.
